Sourdough is fermented overnight before its high temperature baking. It's the covered cast iron dutch oven that gives this loaf its thinly crusty outer shell and its iconic and airy interior sponge.

  • White unbleached organic wheat flour, whole organic wheat flour, mountain well water, Dario's hand-cultivated sourdough starter, red salt, curiosity, patience, and love -- baked in cast iron dusted with rice flour.
